Our first recipe is the most simple, for the novices if you will. It’s the easiest version of the avocado toast because it only involves two things, avocado and toast. 1. Mash one avocado in a bowl.

2. Add a teaspoon of olive oil, and salt/pepper to taste.

3. Toast two slices of La Boulangerie’s Croissant Toast.

4. Once the toast is ready, spread the avocado on the toast.

5. Place fresh bean sprouts on top of the avocado.

6. Sprinkle crushes red pepper and the smallest amount of cayenne to taste.


Let’s add one of my favorite salted meats… prosciutto! If you like a savory kick to your avocado toast, it’s the easiest way to get it. Thin slices of prosciutto and fresh green onions make this a great lunch-time recipe. In this recipe we sliced the prosciutto nice and small so it’s easier to bite.

1. Toast two slices of La Boulangerie’s Croissant Toast.

2. Slice avocado in quarters.

3. Add slices of avocado to the toast.

4. Add slices of prosciutto.

5. Add fresh cracked pepper and a drizzle of olive oil.

I had to start skipping my morning bagel to try and save some calories, so this is one of my favorite lunches when I have the time to make it. It’s a simple recipe but you’re going to want to find some really tasty lox, smoked salmon, as that’s the most important part of this recipe.

I received my order in just two days and was so excited to try it out. While I made my first breakfast with it, I learned a little more about the bread…

Melt butter in a skillet over medium-low heat. Crack eggs into the skillet side by side and cook until eggs are white on the bottom layer and firm enough to flip, 2 to 3 minutes. Flip eggs, trying not to crack the yolk, and cook until egg reaches desired doneness, 2 to 5 minutes more.

Meanwhile, toast bread slices to desired doneness, 3 to 5 minutes.

Few quick facts on this fruit: close to 20 vitamins & minerals, high in fiber (nearly 80% of its carb content is dietary fiber), an anti-inflammatory food (carotenoid antioxidants which also help nutrient absorption of other foods eaten with it, omega-3 fatty acids, nearly 2x the potassium of the lauded banana, and I could go on and on.

I tried to create a simple balance of flavors here that would complement and enhance the creamy flavor of the avocado without overwhelming it. Tart of lemon, spice of red pepper = success. Aka my friend and I continued to talk about it for another half hour after we were finished eating.

Toast the three slices of bread for this avocado toast recipe in the toaster or in an oven until they are golden and crispy. You don't want the toast to burn, of course, but this is no time for lightly toasted bread, as it may become soggy and may lack the resilience to support the weight of all the great stuff you'll be piling on.

A spiralizer makes fast work of cutting the onion into thin strands, and you can prepare the pickles up to a week in advance, so your ultimate morning meal will come together in no time.

The Ultimate Avocado Toast


For the pickled onion:

  • 1 red onion, spiralized with the chipper blade
  • 6 peppercorns
  • 1 bay leaf
  • 1 cup (8 fl. oz./250 ml) water
  • 1 cup (8 fl. oz./250 ml) red wine vinegar
  • 1/4 cup (2 oz./60 g) sugar
  • 1 Tbs. kosher salt
  • 2 avocados
  • 1 Tbs. fresh lime juice (optional)
  • Kosher salt and freshly ground pepper
  • 4 slices whole-wheat bread, toasted
  • 1 Tbs. unsalted butter
  • 4 eggs
  • Flaky sea salt
  • Smoked paprika or pimentón for garnish
  • Chopped fresh chives for garnish

1. To make the pickled onion, in a heatproof bowl, combine the onion, peppercorns and bay leaf. In a small saucepan over high heat, combine the water, vinegar, sugar and salt and bring to a simmer, stirring to dissolve the sugar and salt. Pour over the onion and let cool to room temperature. Cover and refrigerate for at least 1 hour or up to 1 week before using.

2. Cut the avocados in half and remove the pits. Scoop the flesh into a bowl, add the lime juice and a large pinch of kosher salt, and coarsely mash. Taste and add more salt if desired. Spread the avocado over the toast slices, dividing it evenly.

3. Heat a griddle over medium heat. Add the butter to the griddle. When the butter foams, place 4 egg fry rings on the griddle and crack an egg into each one. Cook until the whites are set and the yolks have begun to thicken but are still soft, about 4 minutes, or until done to your liking. Lift off the rings and top each avocado toast with a fried egg.

4. Drain the pickled onion and top the toasts with the onion, dividing it evenly. Sprinkle with flaky sea salt and paprika, garnish with chives and serve immediately. Serves 4.

Smashed avocado on charred sourdough with sea salt. It’s a thing of pure joy. Great as breakfast, brunch or a snack. This has to be our favourite weekend breakfast. It literally takes five minutes to prepare, and is a super healthy way to start the day. Avocado is rich in heart-healthy monounsaturated fatty acids, vitamin K, vitamin C, vitamin E, fibre and potassium plus, some say eating avocado can lower cholesterol and triglyceride levels.

We put our mashed avocado on sourdough, but it would be equally good on rye bread. You could also add a little lemon juice, to prevent the avocado from browning.

Avocado on toast with chorizo and pepperdew

Mash avocado with a pinch of smoked paprika and salt. Top with crisp fried chorizo bits and sliced sweet pepperdew peppers.

Sumac, feta and mint avocado toast

Mash ripe avocado over slices of toasted seeded bloomer. Crumble over some feta, tear over a few mint leaves, add a pinch sumac and a good drizzle of olive oil.
