What to serve with baked potatoes?
Quite often during the week I will make a boiled ham and serve it with jacket potato sides and some greens for dinner. The big advantage is that the potatoes can cook in the oven while the ham is being baked. This makes it a very easy family meal to make as there is not much preparation involved at all.
On Boxing day (or St. Stephens Day), the day after Christmas, we like to eat baked potatoes with baked ham and mango chutney &ndash and maybe some re-heated brussel sprouts. delicious!

The potato skins can be really tasty, when they are nice and crisp. We do this by rubbing oil and some salt into the skins.
But be aware that the skins are quite nutritious, as they absorb the nutrients from the soil. But they also absorb pesticides so make sure you get organically grown potatoes if you want to eat the skins.

When we were visiting our family in England last week, we ate our weight in jacket potatoes. They’re different from the baked potatoes we make because they have super crispy skin and a fluffy melty inside. SO AMAZINGLY GOOD.
They’re all over the place in England. Every pub and restaurant we went to devoted a section of the menu to them, along with a choice of toppings: grated cheddar, baked beans, tuna, cole slaw or plain with butter, salt and pepper.
My aunt Janey often made them for our dinners in Cornwall—as a side to roast chicken or sausages—and we all loved them so much, so she agreed to share the basic recipe…
“Preheat oven to 200C/400F. Cut a cross on the potatoes. Put the potatoes at the top of the oven—straight on the rack, not a baking tray. Cook 1-2 hours (usually closer to 2). When they feel crunchy on the outside, pull the rack out, cut the potatoes open again to release the steam, then put them back into the oven. The major important thing is NOT to turn the oven down as they go soggy and lose their crunch. After ten minutes, serve immediately with shedloads of butter, salt and pepper. Perfect.”

- ½ teaspoon salt

Preheat the oven to 300 degrees F (150 degrees C). Scrub the potato, and pierce the skin several times with a knife or fork. Rub the skin with olive oil, then with salt.

- Preheat oven to 200* C (390* F) Fan.
- Lay 4 sheets of aluminum foil with parchment on a working surface.
- Pierce the potatoes all over with a fork and place one in the center of each sheet of foil.
- To each potato add ½ tablespoon of olive oil, ½ clove of garlic, 1 sprig of rosemary, 1 sprig of thyme and 1 sprig of oregano.
- Wrap each potato in the sheet of foil, securely and transfer to a baking pan.
- Bake for 1-1 ½ hours.
- When ready, remove from oven and unwrap.
- Slice them lengthwise with a knife and gently push the sides together with your hands to open the sliced part more.
- Place them back in the same baking pan without any foil and drizzle each with a few drops of olive oil.
- Add salt, pepper, thyme and 1 tablespoon of cream cheese over the openings of each potato.
- Fold the turkey slices in half and add 2 slices to each potato over the cream cheese.
- Dice the bell peppers into 0.5 cm cubes and add them over the cream cheese.
- Sprinkle with cheddar and bake for 10-15 minutes.
- When ready, remove from oven and serve with finely chopped spring onion, mint and olive oil.
